Notepad++ itself doesn’t have ftp profiles. I will assume you are asking about the NppFTP Plugin’s FTP profiles, as that’s the only ftp-related plugin that I am aware of or have experience of.

They shouldn’t disappear. I have been using my same profiles for years, and they’ve never disappeared on me.

For a normal installation of Notepad++, NppFTP keeps its profiles in
%AppData%\Notepad++\Plugins\Config\NppFTP\NppFTP.xml
. And like most NPP config files, it only gets written to disk when Notepad++ exits, not when you make the change. So after exiting Notepad++, you should be able to copy that file somewhere else. But I doubt that it’s just somehow magically disappearing (unless you have an over-zealous AntiVirus or similar program running; we have had reports before of things that turned out to be AV software deleting Notepad++ config files for no good reason).

The two other guesses I have as to what might be going wrong for you:

You are leaving Notepad++ open when you shutdown or restart the PC, so maybe the shutdown sequence is killing the NPP process before the plugin has had a chance to save its config file

to prevent this, you could exit Notepad++ first, then shut down or reboot after that

You don’t have the right permissions to be able to write the config file, so NppFTP isn’t able to save the files

in Windows Explorer, navigate to
%AppData%\Notepad++\Plugins\Config\NppFTP\
directory

right click on
NppFTP
in the directory tree, and do Properties and Security, and make sure your user has Modify and Write (or Full Control, which includes both).

Also make sure that Notepad++ is really running as the same user you are logged in as
