Did you try Plugins, then Converter, then ASCII --> HEX? Select the content to be converted before running the conversion, it will convert as much as you select.
Or do you mean something entirely different?

PS be aware this actually converts the characters, so if you save then you will have different file content

There is a HexEditor plugin. Of the many flavors available, I’ve found the version listed in Plugins Admin NPP_HexEdit to be the least unstable. (Note: I’ve never put the time into tracking down the cause of the occasional unstable behavior on my system, as I rely on HxD for my hex editing needs.)
