v8.4.8 Dark Theme Icons are forced to minimalist
I upgraded to version 8.4.8 today and now the menu icons are all white minimalist versions of their former self. In Light Theme the icons look normal.
Dark Theme SHOULD NOT force the icons to be minimalistic.
Instead Dark Theme should only affect the color of the Menu bar. Minimalist Should be a preferences that should be selectable under the themes options. It should never be a forced option.
It doesn’t force it, just defaults to it. You are free to choose other of the Settings > Preferences > General > Toolbar options, or to make use of the toolbar customization feature – both of which are described in the links provided to the appropriate locations in the official Online User Manual at npp-user-manual.org

You can pick the “standard icons: small” set in the options I mentioned.
The 5 default icon sets are compiled in to Notepad++, and you cannot change those. Your choices are to either use the options provided, manually changing the icons to “standard icons: small” once after you install (at which point, that option gets saved, and unless you are ping-ponging back and forth between light and dark, you should never need to set it on that computer again); or you can define the custom icon set, as defined in the toolbar customization feature that I already linked you to.
