How do I use Move to New Instance? I’d love to have two Notepad++ windows sidfe-by-side.

Save the file! and you can move to new instance. It can’t do it to an unsaved file.

This is clearly pointed out in the documentation that @Terry-R linked:
If the current file is currently not modified (so no unsaved changes), you can also either Move to New Instance or Clone to New Instance… -
Remember to save your file first. Once saved, you’ll be able to transfer it to a new instance. This operation isn’t possible with unsaved files.
