Text typed in using UTF-8 is suddenly becoming ANSI and gets converted into NUL NUL NUL

When I have entered something in UTF-8 and if suddenly computer is shut down, when I re-open that file the UTF8 encoding on bottom bar is shown as ANSI and normal text becomes NUL NUL NUL NUL … So on
