See my answers here and here, which tell you how to compare your theme to the stylers.model.xml – you will need to update missing lines, similar to what I had those other users do for theirs.
Also, as discussed in that second conversation, the plugins CSVLint and ComparePlus are both known to have problems that give that symptom, and there may be other plugins. You might try running without plugins to see if it works, or download a portable zip, and temporarily run Notepad++ from the unzip of that download without changing settings (except maybe going to Dark Mode), to make sure it works as expected with a fresh unzip.
